Some of my favorite recipes are the most basic ones. This Peanut Butter Oatmeal Cookie recipe is one I remember from my childhood and used in my third cozy mystery, Muffins & Murder (A perfect choice for this time of year since it starts with a Halloween murder!)
Always start by creaming the peanut butter, sugars, eggs and vanilla. Then mix the dry ingredients and add them slowly to the wet ones.
Last, add your old fashioned oats–not quick oats! If you like to add nuts or chocolate chips, they go in after the oats are fully encorporated.
Peanut Butter Oatmeal Cookies
These Peanut Butter Oatmeal cookies are a favorite of mine--and Tess's as well.
Ingredients
- 1 cup brown sugar
- 1 cup granulated sugar
- 1/2 cup butter
- 3/4 cup peanut butter
- 2 eggs
- 1 tsp vanilla
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups flour
- 2 1/2 cups old fashioned oats
Instructions
1. Preheat the oven to 350 degrees.
2. Cream the butter, brown and granulated sugar and eggs. Add peanut butter and vanilla and mix well.
3. Add the salt and baking soda to the flour and then add to the batter. Stir in the oats and mix until well blended.
4. Form into walnut-sized balls and bake at 350 degrees for 12 minutes or until they are just barely begin to brown. Makes about 4 ½ dozen cookies.
Notes
Don't use additional peanut butter in this recipe as it can dry out the cookies.
If you are a fan of peanut butter and chocolate, adding 3/4 cups of chocolate chips makes this recipe even better. Or my BIL loves dipping them in Nutella.
