I like Pinterest probably a little too much. Let’s be honest–if I’m looking for a new recipe to cook, a how-too tutorial for a craft, or almost anything else, I can usually find what I’m looking for on Pinterest. It shouldn’t be a surprise then, that I’ve found some amazing dessert recipes there. I’m sure I found one for chocolate chip cookie dough brownies when my husband was going wheat free for a while, and the recipe is great (find it here if you’re keto, sugar free, grain free, gluten free, etc.)

Since we’re no longer on a wheat-free diet, I use an adaptation of my own favorite brownie and cookie dough recipes to make this now, and it’s seriously addictive. This is definitely going into my next culinary mystery!

Since my 9×13 cake pans are in storage still, I made this in two 8×8 pans instead, so you could easily cut the recipe in half if you don’t want the full amount.

Chocolate Chip Cookie Dough Brownies

Chocolate Chip Cookie Dough Brownies

This recipe will settle any chocolate lover's sweet tooth.

Ingredients

  • 2 cups sugar
  • 4 eggs
  • 1 cup plus 3 Tbsp butter
  • 1 tsp vanilla
  • 2 cups melted unsweetened chocolate chips
  • ½ cup plus 1 Tbsp cocoa
  • Mix, then add: 2 ½ cup flour
  • ¼ tsp baking soda
  • 1 tsp salt
  • 1 cup shortening
  • ¾ cup sugar
  • ¾ cup brown sugar
  • ½ cup water
  • 1 tsp vanilla
  • 2 ½ cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 Tbsp baking powder
  • 6 oz chocolate chips, or about a cup.

Instructions

    1. Mix the sugar, eggs, butter, vanilla and cocoa until smooth. Melt the chocolate chips in the microwave, stirring every twenty seconds until smooth Cool and mix in the rest of it. Add the baking soda and salt, then the flour mixing between cup fulls. Add the chocolate chips into the batter, mixing well.

    2. Pour into greased and floured 9x13 pan. I usually use a spray oil like Pam or Vegalene, then flour the pan to keep it from sticking. Bake at 350 degrees for 30-35 minutes. Set aside to cool.

    To mix the cookie dough:

    3. Cream the shortening and sugars, then add the water and vanilla and mix. In another bowl mix the flour, salt, baking soda and baking powder. Add slowly to the wet ingredients. When fully mixed, add in the chocolate chips and mix well.

    4. Press the cookie dough on top of the brownies when they have cooled enough. Slice and enjoy!

Notes

This is my standard chocolate chip cookie dough recipe, except I replaced the 2 eggs with the water and baking soda since the dough wouldn't be baked. If you wish to use it to make cookies, you can bake it with the current ingredients, or swap the eggs back in. Bake at 350 for about 10 minutes and enjoy!
